3 Ingredient Peanut Butter Cookies

This is a beautifully simple recipe (not even sure that it is a recipe, really) that Caitlin and I made every single week in our last year of high school. I'm not sure who gave us the recipe, but we were so sceptical when we first heard it, and tried adding lots of extra stuff in to make it "better", but the truth is, these three ingredients mixed together is just perfect.

We call it "Heaven on a Stick". Not sure why, as its not on a stick... But that's what it's called.

The magic three ingredients....

One cup peanut butter.
One cup sugar.
An egg.

Stir all together, bake at 180C for 10 minutes.
Crazy? I know.

Over the years, we've tried adding stuff in... Chocolate chips are great, but you don't need them. m&ms were silly. Caramel made it too sweet, marshmallows too squishy, honey made it runny, sprinkles ruined it.

Essentially we learned that if it ain't broke, don't fix it.
The only suggestion I can make is that you can cut down the sugar, maybe to 1/2 or 3/4 cup, if you don't want your cookies too sweet. And these are heavenly dipped in warm milk!

Apart from that, go nuts! Chunky, smooth or whipped all work fine (:

When I cracked open that egg it had two yolks!
